The dish only became firmly tied to Thanksgiving roughly two centuries later, in the 1800s, pushed along by Sarah Josepha Hale. Hale, a magazine editor who spent decades campaigning for a national Thanksgiving holiday, published pumpkin pie recipes and described the dessert as essential to an ideal holiday table, cementing an association that had barely existed in colonial times.

From a Savory Squash Dish to a Sweet Custard

Colonial cooks often treated pumpkin as a savory ingredient rather than a dessert base, sometimes hollowing out the whole squash and filling the cavity with milk, honey, and spices before baking it directly in the coals with no crust at all. That whole-squash method was practical for a household without a proper oven, but it looked nothing like the neat triangular slice shown on this printable.
